Yummo..this recipe makes around 50 bikkies. I tend to make them a little bigger than suggested and cook them a little longer. Experiment and find what works for you!

Ingredients
250g softened butter
1 tsp vanilla
1/2 cup firmly packed brown sugar
1 cup caster sugar
2 eggs
2 3/4 cups plain flour
1 tsp bicarbonate of soda
1/2 tsp ground nutmeg
1 tbs caster sugar extra
2 tsp ground cinnamon

Method
Cream butter, sugars and extract then add eggs one at a time until combined. Stir combined flour, soda and nutmeg into egg mixture until combined. Cover and refrigerate for 1/2 hour. Roll level tablespoons of mixture into balls, then roll in cinnamon sugar. Bake in 180C (160C fanforced) oven for around 12 minutes.

Be warned, the mixture becomes too hard to roll into balls very quickly so work fast and refrigerate again between bakes. Once cooked, these are a little fragile too, so be careful how you store them!
