These are simply devine. Apparently the mixture is very similar to what is used to make donuts, but they are baked instead of fried.
Ingredients
105g Butter
2/3 cup sugar
1 egg
1 1/2 cups plain flour
1 1/2 tsp baking powder
1/2 tsp bicarb soda
1/2 tsp salt
1/2 tsp nutmeg
1/2 cup buttermilk
1 1/2 tsp vanilla
50g butter extra, melted
1tbs sugar/caster sugar extra
2 tsp cinnamon
Method
Cream together butter and sugar. Add egg and beat until combined. Sift together flour, baking powder and bicarb. Stir through salt and nutmeg. Add all wet ingredients and gently fold through until combined. It should be reasonably light and fluffy, and almost dough like.
Bake in 180C (160C fanforced) oven for 20-25 minutes. Muffins are cooked when the centre springs back if touched and golden. Allow to cool slightly in muffin pan then dip top into melted butter, then in the combined extra sugar and cinnamon. Cool on wire racks.
This recipe makes 9 muffins. Adjust cooking time if making more/less from the one batch.
